# Ingredients
* 250g cauliflower
* 60g butter
* 30g grated parmesan
# Process
* Bring pan of water to a boil and cut cauliflower into florets
* Add cauliflower to water and boil until just beginning to get soft, then strain
* Add remaining ingredients to cauliflower and mash until smooth
* Add salt and pepper to taste
